Cornmeal & Leek Savoury Waffles

Quarantine meals have given me a lot of time to really experiment and work with what I have in my pantry. I love cornmeal. I grew up eating cornmeal porridge as a kid and always have some to hand. This morning I craved something savoury, so I made this recipe! This is very adaptable, you can use spring onions/chives even red onions in place of the leeks!






Ingredients: 93g Plain Flour

47g Chickpea Flour

47g Coarse Cornmeal

1 teaspoon of Baking Powder

1/2 teaspoon of Baking Soda

One Chia Egg

1 Tablespoon of Apple Cider Vinegar

60g Chopped Leek (Preferably the green top)

225ml Plant-based Milk

2 Tablespoons of Butter

1 Teaspoon Sea Salt


Makes: Two Waffles


Method:


Start by making a Chia Egg - Take a tablespoon of chia seeds and put in a small bowl with 3 tablespoons of water. Mix and then set aside to make a gel. Take a frying pan and put on a medium heat. Take one tablespoon of butter and allow to melt for about 30 seconds or so, then add the chopped leeks. Add a pinch of salt to help the leeks to sauté - fry for 2 minutes till the leeks are soft, but not browned. Set aside.


In a bowl sieve your Plain Flour, chickpea flour, baking powder, soda and salt. Once sieved add you coarse cornmeal and using a whisk, mix it all together. In a separate bowl add your milk and apple cider vinegar and combine the chia egg and the leeks. Mix till completely combined. Take the wet ingredients and add to your dry mixture - Whisk till you have a smooth batter.


Now you can begin to heat your waffle iron. Whilst it's heating up, melt your butter. Once the waffle iron is ready, brush on your butter and depending on the shape, take a ladle and pour into each side. I've found with a circular waffle iron, two ladles makes a full waffle. Using the back of the ladle, smooth and even out the batter so that the whole shape is filled.


Close the waffle iron and allow to cook for 5-8minutes. Till golden and crispy! As it's cooking you can work on your toppings to go with it - I served my waffle with half an avocado and a spiced maple syrup. This would work with pan fried Mushrooms - sautéed spinach - tofu scramble - vegan sausages, or the full works if you're feeling fancy!

Spicy syrup ingredients:

4 Tablespoons of maple syrup

2 Tablespoons of your preferred hot sauce

optional (1 tablespoon spoon of toasted sesame seed oil)
